Joni’s Reverse Chocolate Chip Cookies
These cookies are the reverse of regular looking chocolate chip cookies hence the name!!!
- 1 cup tapioca starch ( you can use rice flour but the texture will be grainy I don’t recommend it)
- ½ cup gf cocoa powder
- 1 tsp xantham gum
- ½ tsp baking soda
- ¼ tsp. salt
- ¼ tsp baking powder
- ½ cup softened butter
- ½ cup brown sugar
- ½ cup sugar
- 1 egg
- 2 tsp vanilla
- 1 cup white chocolate chips
- In a medium bowl combine all dry ingredients
- In a large bowl combine softened butter and both sugars and with electric mixture on high for 2 minutes until creamy and fluffy.
- Add vanilla and egg to butter mixture and blend for another minute
- Add dry ingredients and mix with a spoon until slightly blended then use electric mixture until completely combined.
- Mix in white chocolate chips with spoon.
- Line 2 cookie sheets with parchment paper. Drop tablespoons of cookie dough 2 inches apart and flatten slightly.
- Bake in 350 degree oven until top is cracked approximately 10-12 minutes
- Let cool before trying to remove from cookie sheet.
